Description    

Nitrite salt – it is natrium or kalium nitrite, mixed with food salt. It is used to prepering sausage – meat, smoke – dried meat products. Such mix make longer expiry date, keeps red meat colour. Normatives lets to put nitrite salt within 150 mg for 1 kg meat, because big amounts of nitrites are dangerous for people health.

 

Salt is :

  • Giving taste substance;
  • Oxidation inhibitor;
  • Conserved substance;
  • Melting protein reagent.
