Sesame – annual 2-3 metres high grassy plant. It‘s leaves small, fluffy, flower white, rose or some violet, all frowers blossom only one time. Seeds grow up in the boxes, where are till 10 stalls. When seeds become riped, plants are cuted ir dried, till seed become crumble off the boxes. Sesame seeds are small and a bit flatten, 1-2 cm lenght and 0.5-1 mm thick, brownish, yellowish, brown and even black and rarely white, invest with hard creamy seed – coat. Sesame seeds contains over 65% fat oils, from witch are 82% unsaturated acids. Neither seeds, neither oil don’t have any smell and taste looks like most quality olive oil. When seeds are toasted, start felled redolence, nuts remind flavour. Sesame seeds collected valuable vegetables proteins. From sesame seeds are pressed good quality oil. It is used to aromate gastronomy fats and margarines. Such oil is given with various tiffins. In seeds oilcake remains a lot of proteins and fats and from them are prepared food halva. With this oil is flavoured prawn and other sea products, deserts, especially fits for baked apples. Sesame seeds are decorated and flavoured pikeletes, crackers, bread, cakes. Sesame oil imperishable, that is why used in pharmacy and perfume industry for creams, soaps manufactory.
