Caraway seeds – matured dried biennial grassy plants (Carum carvy) twoseed fruitage. They are tabular oval oblong form. Fruitage lenght 3 - 8 mm, width 1 - 2 mm, colour – brown with greenish tinge., borders – light yellow. Caraway contains volatile oils 3 - 7%. Their volatile oils are composed from carvone and limonene witch contains 97 - 98 % all volatile oil amount. They gather proteins, 15% fats oil, flavonoides, sour substances, kumarines. Caraway aromate depends on carvone, witch in caraway volatile oil are 47-50 % Good quality caraway have strong and burning tang taste. Caraways are dried in 35 - 40 o C temperature in stove and seeds became yellow brown colour.
From old times caraways were one of the main bakers spices. They are used for liqueur, vodka manufacture, bread bake industry, cheeses, beers and fresh drinks production, confectionary, making first or second dishes (especially from potatoes, cabbages and curds), souring and salting vegetables. Caraways aromated fish, fats lamb and porky dishes. This is old known medical plant. Caraway preparations make better for digestive system. They relax muscles and stimulate bilious attack.
