Mayonnaise – viscous cold sauce. For it‘s manufacture are used these raws: food vegetables rafined and dezodorated oils, eggs or eggs powder, suggar, alimentary salt, spices or spices grass, vegetables or their juisy, mustard powder, milk or milks products, water. From alimentary fixings let to use: acids and acidity controled substances, sweeteners, colourants, aromate and taste intensive substances, emulsifiers or their salts, natural or modify starch, conservants, antioxidants, stabilizers, thickeners but their amounts couldn‘t exceed Lithuanian hygiene norm HN53:2003 regulate values. Depends on mixed substances mayonnaisecan be different kinds and tastes. Also the fatness of mayonaise are different. Mixed with various saucesor ingredients from mayonaise are made a lot of sauces. Also it is used alone with some dish. There are about 300-360 kcal in 100 g of mayonaise. The most part contains fats – about 35-40 %, carbohydrates are about 5-8 %.
