Thermostable fruit fillings are jelly consistence fillings, made from suggar, one or several kinds of fruit pupls and water.They are used for confectionary and baking industry. The fillings are thermostable and baking in high temperature their texture and flavour – taste characteristics leaves unchanged. These fillings fits to use instead marmalade. Jam is valuable product, contains lots of natural pectin. Pectins lows harmful microflore activity in intestine, connects toxic metals (plumbum, cobalt, strontium and others): comprise insoluble compounds, which are move out from the organism. Dry substances not less 60%.
