Jam – sweet filling from fruits, suggar and water, boiled till such concentration, that cold syrup stagnate. It is prepared from choped or mashed fruits, that is why they are differ from konserve (they are prepared from uncuted fruits or their parts) and from fruit jelly (they are prepared from fruit juise, ousting hard parts and then boiled with suggar). Jam is valuable product, contains lots of natural pectin. Pectins lows harmful microflore activity in intestine, connects toxic metals (plumbum, cobalt, strontium and others): comprise insoluble compounds, which are move out from the organism. Marmalade is prepared similarly as other jams, but it is made from citrus fruit (one or several kinds of fruits). Dry substances - not less 60%.
